I started with a Vanilla Buttercream frosting but eliminated the milk and vanilla and added about a tablespoon of strawberry jam.

Those look great! I'm definitely going to be making them for our next family gathering.

About your cupcake stand.. I think I have the same one. Did you find it hard to get it together? I can't get the middle part to screw into the bottom part, its like its too big :(

I found it quite simple to put together and didn't have any problems. I forget now, but is one end of the screw-in rod larger than the other? Maybe try flipping it?
