Pumpkin cupcakes

Since it's just starting into Fall (my very favorite season), I've been getting the hankering for Fall food. So this weekend,  I decided to make pumpkin cupcakes. The thing is, the recipe calls for canned pumpkin, but specifically states that canned pumpkin pie filling will not work. Unfortunately no, since the recipe came from a book rather than online. But should you ever check out the book "Cupcakes!" by Elinor Klivans, it's in there (along with a ton of other really good recipes!).

wow they look cool. what does pumpkin taste like? we dont really eat it over here in the uk but i've always been curious!

Pumpkin tastes like squash. We usually mix it with cinnamon and nutmeg and make pie (or cupcakes, in this case!).

Hmmmmm, when I think of pumpkin, all I can think of is cinnamon and cloves! I can't even think of what pumpkin by itself tastes like, I'm so used to having it with pie spices.

It's actually pretty easy: You frost it like normal with plain cream cheese frosting, then take the remaining frosting (you need at least 1/4 of a cup) and tint it somehow; the recipe I used suggested cinnamon, but I don't think it really tinted it dark enough. Then, using a pastry bag or a ziplock baggie with the corner snipped off, pipe a dot in the center of a cupcake, and two to three circles around it (like a bull's-eye). Then, take a toothpick and drag it from the center dot out to the side of the cupcake, and repeat all around the cupcake. On a few of mine you can see I went down too deep, but if you just barely drag the toothpick, it makes perfect little webs!
