I've never made filled cupcakes before, but I'm definitely going to try some. I have a question though - how do you fill them? Your recipe says to fill from the bottom, but how do you do that with paper cases? Your cakes don't look like you've taken them out of the cases, so how do you do it? And where does the extra cake go that is pushed out of the way? Does the filling just sort of squoosh into the gaps?
I didn't fill them from the bottom. I filled them from the top. I thought the same thing about your question, where does the cake go? But like you say, it does just squoosh in the gaps. They do puff up a little, but I was suprised that I could get that much filling in them, without the filling wanting to come out the top of where I inserted the tip. So like I wrote in my post, I used the bismark tip that is for filling cupcakes, but like Giada says in the recipe, I think you could just use another regular round tip. You really don't need to get the tip way in there, and the frosting on the top of the cupcake covers the hole. It was much easier than I anticipated. You should definately try it!
Right-o, that sounds much more practical. I shall look for a tip thingy (mine are all far too round and thick) and try them this weekend. If they are a success I'll post pics.
