Cupcakes!

Well I baked a batch of yummy cupcakes last week while I was on vacation. I used yellow cake mix and orange soda, so they were vegan (although the frosting ruined that, it's store bought stuff. I have a good recipe for vegan frosting but it takes time, and I was in a crunch) and tasted like an orange creamsicle! They tasted amazing, but I did have ( Read more... )

Gotta ask-- as a Vegan what did you use to frost them?

The cupcakes themselves were vegan but I didn't have time to make vegan frosting, so I just used store bought frosting. I'm not a vegan myself anymore so that wasn't a big problem. My mom has this great recipe for vegan frosting, but I don't have it right now. When I do, I'll be totally sure to post it on here!

the culprit may have been the orange soda.
The carbonation put air into the cupcakes, and as they baked, the air went ka-put.. so instead of rising they stayed flat as the bubbles weren't there to keep lifting them up.

You should try using flat pop (soda) next time, or mix it better with an electric mixer so as to make the pop (soda) flat.. And see if that improves!

Also, what did you substatute for eggs? (i am very curious as someone allergic to raw eggs)

You just use the soda pop in place of your liquids (and that includes eggs). Use 12 oz. or a can, of soda. Cola's don't flavor the batter too much, but fruity sodas- orange and grape, particularly, add a little fruity flavor to the cupcakes.

Really? I didn't know this would work..

I thought the eggs were there to hold them together?
Does this work with all baking recipes?

And is there any other things that you can substitute in lieu of eggs in other kinds of recipes?

I made cupcakes the other day with orange soda and a yellow cake mix. I used the amount of eggs it asked for (3) and then for the soda I did part of the amount of water (1 cup) and the oil (1/3 cup) and then added 1/4 cup water and they came out perfectly.
