We went to Rockwood last year, and while it was nice, we feel like we pretty much did everythign to do there last time. For the former, in the past I've enjoyed staying at Bon Echo. If you want epic beach days, Long Point is also good. The shallow water of Lake Erie makes for warm water, and it's the softest, deepest sand I've ever walked on. Bruce Peninsula National Park has nice-ish sites, and some of the most epic hiking trails you can find in Southern Ontario, but Georgian Bay will still be very cold in mid-July.
If you're going the wilderness route, Algonquin is an obvious answer. The further you can get away from the Hwy 60 corridor, the better. Killarney is beautiful, but further away.
