A little overdue with these photos, but here we go.

Back during the phd orientation course there was a party. invlwhen and I made macarons for it. We used this recipe (which in summary is "blend equal parts almond flour and powdered sugar; fold with italian meringue, bake at exactly 320F"), which is the only recipe I've tried so far. the website has a ( Read more... )

I liked the chili in the chocolate and agree that those were the ones that came out best.

If I remember correctly the acidity of the cocoa powder helps stabilize the meringue (I think we might have messed around with cream of tartar too?).

I would believe that, though I'm pretty sure I used cream of tartar in every batch of meringue involved. (maybe it just needed more acidity still.)
