I thought vendors were supposed to be allowed to sell more ethnic foods...? When it happens, it's going to be fantastic.

I will definitely post this! Though I'm a bit embarrassed about how little I've experimented. ;)

Why 'chevalle/cheval'? Is 'horse' too upsetting for folks to get their head around, so they need a fancy name for it? :) A horse is a horse, of course of course.

It was my understanding that chevalle was the food name for it?

Well, I think 'cheval' just means 'horse' rather than 'horse meat'. While every time I've eaten horse it has indeed been labeled 'cheval', that's because I've only eaten it in France. Calling it cheval when speaking English would be like calling beef 'bouef', or worse, 'vache'.

I can understand why 'cheval' might be used as a euphemism, but there's no historic precedent for it that I'm aware of. I don't think the French were eating horse back when they introduced all their meat words to the English language with the Norman invasion; horse eating is an artefact of Revolutionary-era France.

I'm now wondering which item is topping people's lists of "would not eat" -- roadkill or whole insects.

(I had the latter at Oyamel in DC because really, why not? My grasshopper-filled taco was actually pretty nice; it just tasted like the spices they'd put into it with a crunchy texture.)
