Well, maybe the red matter needs lots of energy to get its black hole started, so simply throwing it into stratosphere won't do it. (Now, given some stuff near the end, dropping a bit more of it into the stratosphere and throwing a torpedo at it should work).
More plausible to me is, let's face it, Nero was a terrorist. In his mind, the 'impending' part of "Impending Doom" is just as important as the 'doom'.
Or for more benefit of the doubt: Giant plot holes and minute discussion thereof are also part of Star Trek. Consider it another element of homage.
FWIW, in a series of prequel comics (and possibly in the movie), it's "explained" that the supernova somehow [yeah, turn off your brain] converts matter it envelopes into energy, hence growing larger the more it blows up. And, as is traditional in Star Trek, space is always just as crowded as we need it to be.
The more amusing part to me, as pointed out by Adam, is that there's really no good reason to assume that same supernova *won't* occur in 2389 in the new universe. And, this time, there's no Vulcan, being the only planet able to turn our Magic_Ore_123 [ok, it has a name in the comics] into that Red Matter. So, this new universe is screwed, thanks to Nero.
