For various reasons I won't subject you to, I'm in the process of equipping a new kitchen. Among the basic tools I need is a proper ladle; the plastic ones I've seen claim to be safe to 400°F/200°C. I make a lot of my soups in a covered glass dish in the microwave, and I understand that a microwave is capable of superheating liquid beyond the 212°F

In addition, sometimes the soup ladle will find itself momentarily touching something even hotter and that won't do it any good, either.
What does work better is silicone (if you don't want to spring for metal). We had several silicone spatulas (from Ikea, I think) which we have used on hot grills, and they work just fine.
My personal preference is a metal ladle with a heat-resistant handle - I have some old ones with wood and Bakelite handles that I like very much.

That said, I think something that's rated to 400°F/200°C will stand up just fine to superheated soup.
