I recently went onto a gluten free diet. Tonight I was going to have an omelet but wondered how it would be if I added potato flour, corn flour and xantham gum. 2 tablespoons melted fat (butter, coconut oil, avocado oil, etc)
2 tablespoons coconut milk or whole milk
1 teaspoon sugar
¼ teaspoon salt
2 tablespoons sifted coconut flour
¼ teaspoon baking powder
the texture is bang on for pancakes :)
