Simple Sandwich Spreads: Pimento Cheese (and a link to Olive Cream Cheese)

I LOVE pimento cheese and sometimes I get the biggest craving for a pimento-cheese-on-white-bread sandwich and a Coke. I have realized that homemade pimento cheese is VASTLY superior to the weird-orange store-bought kind (don't get me wrong, I love that crazy neon stuff too), and I've spent quite awhile perfecting the recipe ( Read more... )

Favorite simple sandwich:
thinly sliced chicken, turkey, or roast beef on wheat bread with mayonnaise, salt, and pepper. That's it.

I can't trust my husband to make this because he'll "improve" it with pickles or onion or whatever else he finds in the fridge. If I want a sandwich with all the trimmings, those are all fine additions. But the very plain sandwich is something I have to make myself.

Mmm, that sounds delicious. You know what's funny? I always forget to put salt and pepper on sandwiches and salads even though I KNOW it makes them so much better. When I finally do remember it's always a re-epiphany. LOL.

A BLT with home grown tomatoes is the perfect summertime sandwich. There's really nothing better than a just picked ripe tomato.

I've never even tasted pimiento cheese but have been seeing it pop up on a lot of restaurant menus this past year or so. I'll have to see why.

Yum! Love BLTs, but I just stopped eating pork. I miss bacon!

You HAVE to try pimento cheese! Delicious. I love piling it in an oven-safe dish and broiling it to use as a dip, too. Oh man.

This looks great! We've been doing lots of picnics of late, and this would be a fantastic addition to our basket!

I love all kinds of sammiches, but my fave is a baguette or ciabatta loaded with prosciutto, marinated artichoke hearts, roasted red pepper, provolone, and sprouts. Lots of yummy tastes and textures!
