It sounds as though we may have some overlapping health issues--and that looks pretty danged appetizing. (Black pudding is something I'd like to try, but is hard to find in mainstream groceries in my part of the U.S.; I'll probably need to check ethnic specialty shops.)
I'm not surprised by a dearth of Mexican restaurants on your side of the pond, since I don't believe there's been a lot of Anglo (in the sense of English, rather than non-Hispanic American)-Mexican cultural cross-pollination; if there has, I'll welcome correction.

i have good n bad days but im definitely doing alot better now than i was a few years ago.
over here the best black pudding is stornoway black pudding. they use it to stuff chicken breast - delicious!
