2 Questions

1. I have some cooked plums which are incredibly sour. I added what seemed like tons of sugar when cooking them down, but theyre still really sour. What can I do with them?

2. Any ideas for dressings for bean salads? I'll post what I usually do under the cut, but I'm looking for a bit more inspiration.

Maybe you could incorporate those plums into some kind of BBQ or other meat sauce. For pork perhaps. The tang would offset the richness. I'd start with a tomato and vinegar based recipe and tinker from there.

Hmm. I dont normally eat pork but you've got me thinking about some kind of pulled pork idea....

You could also puree them and then make some sort of fruit tea/punch/beverage riffing off of lemonade.

Ooh. Also an interesting idea. What I was planning on doing is using them to counter the sweeter yoghurt I bought :D

I was also pondering making a chutney perhaps. So lots of options it seems, thanks for the ideas!

If you have any more of the aforesaid plums, you might try salt-pickling them and see if you wind up with something approximating umeboshi.

Make plum sauce! The whole sour thing works so well, and it is delicious on roasted meats and pretty much anything I can think of :)
