Bailey’s Mint Oreo Icebox Cake (only 4 ingredients!)

I accidentally made you a St. Patrick's Day dessert. See my post for more (ridiculous) details, but in the meantime, here's the recipe.

Who knew 4 ingredients could taste so good? Icebox cakes pack a ton of bang for their buck -- they are surprisingly delicious and require barely any effort at all. Enjoy!

Does it have to be mint Oreos? Can it be birthday Oreos or even just plain vanilla creme? Also, is it only Bailey's Irish creme or can we use another brand?

Sure, can use any oreos and any liqueur, really. Switch up flavors to your heart's content. Recently I posted a cherry birthday cake oreo icebox cake (http://willowbirdbaking.com/2014/02/24/cherry-icebox-birthday-cake/). Lemon golden oreo would be lovely ( ... )

Any non-alcoholic version you can recommend as a substitute? Or with the liquor, is the alcohol powerful enough for it to be tasted in it?

You can taste the alcohol. If you'd rather it not be spiked, just leave the alcohol out entirely -- any of these work with just the cream and oreos and any extracts you want to flavor (for instance, for lemon, add 1/2 teaspoon lemon extract and maybe some zest if you have it to the cream).

For regular vanilla cream, use vanilla extract. There are coconut, peppermint, orange, lemon, raspberry, coffee, hazelnut, etc. etc. etc. extracts :) Lots to choose from if you're interested in trying out some different flavor profiles.
