Insane Chili Cheese Dip

This dip was a family favorite when I was little. We used a can of Hormel chili without beans and it took around 15 minutes to whip up - perfect for an emergency last minute dip for parties or pot lucks ( Read more... )

The dip sounds SO good that I'm going to save it to make once my pantry clear out gets a bit closer to the end. I'll have to save some of my home made chorizo for the recipe. I need to pick up some arbol chiles on my next trip to the Mexican grocery store in any case.

The chorizo was surprisingly easy to make and there are lots of great ways to use it up ... chorizo cornbread, flaming cheese (queso flameado), chorizo quesadillas. The recipe is here.
