I am not a huge fan of cheesecakes - have difficult relationships with cream-cheese. But this one is pretty good. Good and easy. In fact, it is so easy, your kids can bake it for you!

Cheesecakes used to be very popular but seem to be less so these days. Maybe because so many people are watching their weight and seem to be overwhelmed at the idea of eating a whole piece. I like to make individual mini cheese cakes in muffin tins for buffets and parties which only take a couple of bites to eat. Your kids did a lovely job.

I've only posted a couple of cheesecake recipes myself though I used to make a lovely pina colada and a turtle cheesecake that I was quite proud of. My nephew prefers a simple vanilla bean cheesecake with a cherry topping.
