Chicken recipe?

So, I need to figure out something for dinner tonight. I'm thinking of chicken breasts since we have those, and some way to have my leftover homemade baked beans from yesterday as a side. I actually don't have much cheese, so that's a downer (because of finances, we're trying to stick with eating what we have here at the house this week), and I'd ( Read more... )

You don't say what's in your pantry, but some of these might work. Marinate the chicken for at least half an hour in the sauce and then cook for about half an hour (or however long it takes til they're done) on 350.

Teriyaki chicken - 1/4 cup soy sauce, chopped green onions if you have them, grated fresh ginger or a bit of powdered ginger, a few teaspoons of brown sugar
Lemon herb chicken - lemon juice and any mixture of fresh or dried herbs you have (especially thyme, rosemary, Italian herbs or herbes de Provence)
Honey mustard chicken - 1/4 cup honey, a few tablespoons of mustard (grainy is good if you have it)
Hunters chicken - barbecue sauce and bacon with some cheese shredded over the top (you can do this with very little cheese, 1/4 cup or less is plenty)
Pesto chicken - Prepared pesto sauce - this is good if you slice the chicken open and stuff it inside

The honey mustard and hunter's chicken recipes sound particularly compatible with baked beans--combinations lending themselves to a sweet-heavy Guy Food sports-bar vibe.

Yeah, those would be my choices out of those four with baked beans. It's a bit matching instead of going with, but it won't strain the bounds of flavor harmony either.

You could do a Parmesan chicken. Mix mayo with Parmesan, and slather over the chicken. Then sprinkle with breadcrumbs. You could adjust the flavours to mesh better with the baked beans.

Kudos on using up items from your pantry/freezer. That was my New Year's resolution as I have a lot of money invested in both and don't want to spend any if not necessary. :) Sounds like you've got some good suggestions already. I've been using up my own own frozen chicken breasts for everything from chicken cutlets used for katsu/don buri bowls, schintzel, sandwiches with marinara sauce or over pasta to kebabs, ground chicken patties and croquettes with mashed potatoes. The pairing with baked potatoes was a puzzler but the combination of a bbq sauce baked chicken breast with the beans sounds delicious. Maybe some colesaw as the vegetable side.

If you go back through my 'chicken' tagged posts you might get some other ideas.
