You end up with avocados. In fact, you end up with a lot of avocados. We have seven grocery bags full and I haven't gone over to collect them from last night... We have given away four bags already (on top of the seven). Anyone got suggestions for avocado dishes, besides guacamole?

Thank you, thank you! I wish I could share all of them. My fear is that they will go bad. We are taking many of them to the local food bank. However, I will keep some to try with these!

Avocado smooshed on toast! With salt, pepper, a squeeze of lime, maybe a bit of feta.

Avocado smooshed with chickpeas, veggies etc, to make a creamy sandwich filling.

I don't have any links but google quinoa salads with avocado. I have made several different quinoa salads that had avocado and all of them turned out awesome.

Also, baked breaded avocado "fries"are yummy too! And avocados halved and filled with shrimp salad.

Sadly, our guest doesn't do seafood, but we do. Thanks for those links. We haven't done sushi in forever... maybe it will be a good thing for our own starter on Christmas Day.

Wow, I wish we could share in your wealth! The only thought I have is that we occasionally get guacamole frozen, so in theory you could save some for later.
