Help me eat better.

Hi! I like my food to be fresh and natural, but keep coming back to Tyson's frozen chicken strips. They're like 7 dollars a bag and last me for a couple weeks. They're delicious and convenient and help me stay within my diet. I dunno, I eat 'em, too, when I'm dieting. They're a little treat, and frankly the breading on the outside is delicious. I'll cut 'em up and put 'em in salad -- if it's got those and avocado, I only need a little orange vinegar for dressing and I'm happy.

If you have Smart and Final near you, you can get a bag that's twice the size of the bag you get in the store, but costs the same.

I wonder why you don't just take boneless chicken breasts, cut them into strips, dip them into seasoned flour, buttermilk (or a beaten egg), then seasoned bread crumbs and bake them on a baking sheet lined with parchment paper and sprayed with cooking spray. Wrap enough for one portion in saran wrap and put all the portions in a freezer bag. Freeze until needed.

I prefer to use a whole cutlet, pounded to an even thickness, bread as above, bake and freeze because I like to serve the cutlets along with pasta dressed with a simple marinara sauce for a quick supper. Sometimes I put a slice of provolone on the thawed cutlet, reheat it in a pre-heated oven at 350 deg and serve cutlet with some marinara sauce on it in a toasted submarine style bun with soup and a salad.

I made and enjoyed this recipe, which i think you can adapt using breast meat instead of thighs to make actual strips instead of nuggets. Not sure it'll cost less than the Tyson overall, but you'll definitely have more control over the ingredients. If you decide to go with the nuggets, thighs tend to be cheaper than breast meat anyway.

I like to make my chicken strips from boneless thighs. Kraft Fresh Take kits make for AMAZING chicken strips. Otherwise you can use flour and whatever seasonings you desire for the breading. Panko with parmesan and seasoning also works well. Much better than frozen chicken strips or deli chicken strips.
