Carrots Everywhere!

Hey Y'all!
I'm just about to pull up the rest of my baby carrots and it's going to be a lotmore than I expected. What are your favorite recipes involving lots of carrots? I've thought of hummus, cake/muffins, pickles, and soup with red pepper/butternut/pumpkin/etc., should I just make a mash and/or a puree and freeze it to use in other dishes?

If you like fresh, I'd learn how to faux root cellar them in a tub of sand. Alton Brown did it on an episode. And then there's ... this.
