Ground bison recipes ideas?

I have ground bison meat in the freezer and I'm in charge of cooking dinner this week. What can I do with it that isn't meatballs, meatloaf, or burgers?

Any help is very much appreciated.

Shepherd's pie! Oh wait, that should be cottage pie! Oh, wait - I have no idea what you'd call it for bison. But nevertheless.

I like bison but if you have some people that are iffy about it try it in lasagna. Lasagna is my go to food for any kind of gamey or different ground meat that I need to use up.

If you do make burgers, be sure not to cook them too much. I was once served a well done Bison burger, and it was so dry that I found it inedible. Some other people served the same thing found it okay, but they were of the opinion that any pink in burgers is a bad thing, so I guess they were used to dry meat.

Note: this is also true of ostrich, which can be regarded for culinary purposes as a feathered cow. (Ostrich used to be among the game meats available at the burger chain Fuddrucker's, regrettably now defunct in my region; they still serve bison, elk, and boar burgers.)
