I recently found some cannoli tubes in my mom's place and decided to finally give these classic Italian pastries a try. For more pictures of the technique, visit my LJ post.
my aunt love these and she was giving hints to me that i should make some for her when she visits my place. i got concerns about availability of stuff for cannoli:
1) is marsala necessary (if so, what could i substitute for the wine ingredient if i need to make it non-alcoholic?) 2) what could be used as an improvised cannoli tube?
I've seen apple juice recommended as a substitute for the Marsala wine.
Wooden dowels which are 1 inch in diameter can be cut into 5 inch lengths. If you go to your hardware store you can have them cut for you.
I've also seen a post where they're made and fried one at a time using the metal handle of a whisk by wrapping around the handle and dipping it into the oil while holding on to the whisk. It looks like it would take FOREVER though.
