This is one of my favorites that fit your criteria:

I serve it over egg noodles with a green salad.

Dijon Mustard Chicken Fricasse

¼ c dijon mustard
¼ c parsley
1 tbsp thyme
3 lbs chicken (I use boneless skinless breasts cut into chunks, the original recipe used skin on fryer pieces)
¼ tsp salt
¼ tsp pepper
1 tbsp olive oil
1 ½ c chopped onion
3 cloves minced garlic
1 c dry white wine
1 c chicken broth

combine mustard, 1 tbsp parsley,
1 ½ tsp thyme & chicken in ziploc.
Coat & chill 8 hours.
Remove chicken, sprinkle with s&p. Heat oil, add chicken.
Cook 5 minutes on each side,
remove from pan.
Saute onion 5 min or until tender. Add garlic, cook 1 minute
stirring constantly. Stir
in wine & broth. Stir in thyme & parsley. Return chicken to
pan. Cover, reduce heat.
Simmer 25 minutes or until chicken is done.
Cook uncovered 5 minutes to thicken sauce.

I'm really torn on bringing my crockpot (I'd have to get a smaller one because I only have the 6 quart sized ones :P)
On one hand, I know how useful it is, & I do love it
On the other, I'm trying to get rid of as many breakable things as possible. & I don't know if I'd use it often enough to warrant the space it would take up. (plus having to stay stationary for 6+ hours might not always be an option)

I've been following whatacrock for a while, & I really do love the recipes I get from there :)

Our "crockpot" is this little guy. It's not that big and it always cooks on high (that 5-6 hour recipe I tried only took 3 per it's instruction booklet), but it works great. Granted we mostly use it for rice, but it can do other stuff just fine.

f you have an intuitive sense of flavor (to your palate at least), you can chuck a hunk-o-meat plus a few flavorings in, turn it on, and in a few hours it's dinner.

That reminds me of another favorite recipe that might interest OP: Carnitas!

2 lb pork butt or pork roast, trimmed
1 lemon, juiced (save the halves)
2 bay leaves
3 cloves garlic, roughly chopped
1 tsp Mexican oregano
1 tbsp cumin
1/2 onion roughly chopped
1 bottle light beer (optional)
vegetable stock

1. Place meat and all spices into the pot, along with the lemon juice and lemon halves and garlic.
2. Cover with beer (water may be used too) and enough stock to cover the meat well.
3. Cover and simmer on medium-low for at least 2 hours, until pork is fork tender. Add onions and cook until onions are translucent.

you can make some great dishes with eggs or tofu- scrambles. they're super easy and can use whatever ingredients you want in addition to the eggs and/or tofu... all you really need for the tofu is some spices, and then throw in some veggies or whatever. I mostly just experiment with combinations of things. the recipe for tofu scramble original that I used was from a cookbook called vegan with a vengeance.

Get a good, all metal wok (no teflon)with a lid. i have one one my camping kit. I have made so many things in it, including Stirfry dishes. I've even cooked rice and pasta in mine.

Any type of stir fry recipe will work for you. Quick and easy, especially if you can find pre cut veggies at the grocery store. Just buy enough for each meal. Through in your protein of choice and voila!

Omelets would also be good for cooking in a small place.
