I got the recipe from a book "Pastry" by Richard Bertinet. Ingredients: 350gms flour, 250gms salted butter, 125gms sugar, 3 egg yolks, 20gms baking powder and 1 egg beaten with a pinch of salt for glazing. I did not follow his method completely. First add baking powder to the flour. Rub in the butter till the fat is the size of your little fingernail. Add the sugar, mix it in evenly. Add the egg and mix. Pull everything together to form a dough. Press down on the dough, turn it a few degrees and press again. Repeat a few times. Put the pastry in the fridge to rest for at least an hour, preferably overnight. When the dough is ready for baking, grease 2 baking trays and preheat oven to 180 degrees C. Break off small lumps of dough, roll each in your hands till you get smooth balls. Place them on the trays and lightly press down on each with your thumb till you get a disc. Brush them with the beaten egg. Then use a fork to make wavy patterns on each biscuit. Bake them for 12 to 15 minutes till golden. Remove trays from the oven and ( ... )
