One of the many, many baby steps I’m taking in my life right now is to start cooking dinner more often. Roasted veggies are made of win. My personal favorite is brussel sprouts tossed with salt, minced garlic and bacon drippings. We keep a cup or 3 of bacon drippings in the fridge, and while butter and EVOO do a laudable job roasting veg, sometimes a little smokey goodness just makes life better. You just need to warm it up a bit if it's been chilling out in the fridge. I prefer bacon drippings for roasting asparagus too. Do try it. You can thank me later. :D

I've had Brussels roasted in bacon grease and it is, indeed, lovely! I'll have to try with asparagus :)
