I have always made this apple pie. It's really quite good, and has no dairy ingredients :)

Saute apples slices (or chop into small bite size pieces) in some butter, brown sugar and cinnamon until soft, then drop a scoop on the large end of a croissant triangle and roll up and bake. Little apple tarts, super easy and quick to make.

All my apple recipes that are sweet and (unless I missed it in any of them) have no dairy, in no particular order - hope one does for you!

Apple Banana Cinnamon Bread - some people call this cake, some bread; it's quite moist.

Apple bread

Apple cake

Apple Dapple cake - either use a different glaze or skip the glaze

Applesauce cupcakes

Russian Apple Cake:

3 granny smith apples, peeled, cored and sliced thinly
1 cup sugar
3 eggs
1 teaspoon baking soda
1 cup flour

Grease an 8x8" pan. Layer apple slices into pan. Whisk together sugar and eggs until well combined, then whisk in baking soda. Then whisk in flour. Pour (this batter is VERY thick, so don't expect it to pour evenly. You don't need to shake the pan or anything to cover all the apples. It'll do it during the baking) onto apples. Bake at 350F for one hour. Let cool 5-10 minutes on a rack, then invert onto cake plate.

Did she call it a pie? Traditionally, it's called a pie, but since this bears no resemblance to what we Americans think of as a "pie," I renamed it "cake." :)

I think she called it a cake. I don't really remember since it was a few years ago though. :)
