Is T short for Tablespoon or Teaspoon?

Yea, tablespoon. Basically 1/3 c. vodka to 1/8 c. nuts. That amount will fit perfectly in the smallest jelly jars. And, it's easy to scale.

Not only does the bean give the extract flavor, if you leave it whole, you can fish it out of the extract, snip off the top of it, and squeeze out all the tasty seeds when you need them. Dual purpose! I love it.

...And then let it dry, stick it in a sugar container and leave it a few weeks: hey presto, vanilla sugar! Keep topping up the container as you use the sugar, that good pod will keep flavouring it for ages. Triple purpose!

Or put it back in the bottle, and top it off with more vodka (or rum, yum). You can get multiple batches of extract from that one bean!

I always keep vanilla sugar in the cupboard. One pod will last literally for years, and whenever a recipe calls for sugar and vanilla essence, I just use the vanilla sugar instead.
