Macaroni and Cheese

I post fairly often in bakebakebake, so some of you will be surprised to learn that I can actually cook, too! I don't get to cook as much as I would prefer, mostly because my boyfriend is a bit particular about what he eats and the way it's cooked... which is why I ended up eating this homemade mac and cheese by myself. I am a HUGE fan of homemade baked mac 'n' cheese, and use my mother's recipe for it - very similar to the one posted here, but extra-tasty with tomatoes slices laid over top and tucked partway into the cheese and noodles before setting it into the oven. OMG, soooooo good!!!

I've never tried making it with shell-shaped pasta tho, so I think I am going to give that a go this week - yum!

This looks amazing and like something I'd have to fight my fiance for helpings of.

Question: does it matter what kind of milk? We go through so much here (and...yeah, that's mostly me and it's never used for cooking) that I buy skim. Does this work better with whole?

I'm actually not sure. This was the first time I've ever made homemade mac & cheese and we only use whole milk in our house. I Googled and it's definitely DOABLE, but not sure how it would taste. Since it only needs such a small amount, can you maybe get like a single-serving size of whole milk? I know at my grocery store they sometimes have pints available or you can buy like a 16 oz. "to go" bottle (like the Nestle Quik size)

Thanks for the answer. I'd suspected whole milk - whole was recommended when I cooked with milk the one time before. I just didn't know if it mattered in this case, as the recipe is quite different.

It isn't like it won't get used even if I don't get a single serving container. :3

I used to make mac and cheese with skim milk all the time. While it's not as tasty (or thick of a sauce) as using whole milk it's fine.

I don't know why your boyfriend would turn up his nose at this mac and cheese. It sounds great though I'd probably use more strongly flavoured cheeses and definitely replace the American cheese with mozzarella cause I like the added stringiness. :) I'd combine some bread crumbs and butter with the parmesan to sprinkle on top for a nice crunchy topping as well.

You can also add chunks of ham cut off from a picnic ham to it for a heartier one dish meal with a nice salad on the side.

I used milder cheeses thinking that it would mean the difference between him liking it or not, lol. Honestly, I think he's never really had homemade mac and cheese before, so since it wasn't Kraft, he was like "??"

I was thinking of adding some bacon and/or spinach next time.

I know what a challenge it is trying to cook for someone with very particular tastes and wish you the best of luck. I cook for myself these days (my LJ is mostly pictures and recipes of things I've made) and it's a much less stressful experience. :)
