Recipe help, please!

Ive lost a recipe, and its driving me mad. I've only ever cooked this once before, so I can't use my usual approach and charge into it, hoping for the best! I'm hoping that somebody would have made something similar, and can help me out ( Read more... )

Thank you very much, but my recipe was oven baked, and used tinned tomatoes. This looks good, though!

I don't have a recipe like what you describe, but chicken breast cooks pretty quickly; most recipes I have that call for baking it involve around 350F/175C for around 20-30 minutes (start checking around 20 minutes, then go from there). It'll go faster if you keep it covered, a bit slower if you don't, so personally I'd just toss it in, keep an eye on it, and see.

Silly magazine, not having that recipe on their website!

That sounds like a quick variant on the classic chicken Parmesan. Usually in chicken parm the cutlets are breaded and fried before being baked, but looking up a recipe will probably help you with the missing bits of the sauce. The Olive Garden restaurant has a web site with dozens of wonderful recipes. I seem to remember one that is similar to what you're looking for.
