Oh my gosh, this actually looks amazing.

I'm in the UK, it's 7:33 on a Sunday and I'm browsing LJ in bed - and this is what you do to me!

I may have to go and dig around in my cupboards to see if I have these things...

I bet this could be done on the fly by baking the potatoes in the microwave, cutting them open and refridgerating them for a little while to take the edge off. Sounds, and Looks, great!

My mom used to make something very similar with a sunny side up egg and bacon inside. I'll definitely have to try this one out.
