sub stevia for sugar in this recipe?

If I subbed stevia for sugar in
this
recipe, would it still work? I plan on adding a tablespoon of alcohol/vodka to help with the texture.

I don't think it will work, as you need to make a simple syrup and stevia won't do that. Also, I have found that stevia gets bitter once you heat it. You would be better off using maltitol crystals instead of sugar.

the only sweetners i can do are stevia, chicory extract and xylotol

Maybe try the Xylitol then. That has a crystallized component that would probably make a good syrup base for the sorbet.
