Corn chowder recipes?

Almost a year ago, I moved away from Berkeley, CA where one of my favorite comfort foods year-round was corn chowder from a restaurant called Smart Alec's (their motto: healthy food fast!). No help on the corn chowder, sorry, but of you're up for freezing corn, there's always either corn pudding or corn casserole.

I'll have to dig for my pudding recipe if you're interested, but the casserole is a summer favorite around here.

Corn casserole:

1 can corn (or equivalent frozen)
1 can creamed corn (or frozen equivalent)
1 stick of butter, room temp
1 cup of sour cream
1 box of Jiffy cornbread mix

Mix all the wet stuff together, then add the Jiffy mix. Pour into a casserole and bake. The time temp is somewhat variable-it usually goes in with whatever else is in there, and also depends on the depth of the casserole dish. Aim for 400 for 30 minutes, but poke it for doneness. The top will be brown.

Stir up the leftovers (if there are any!) and top with crumbled bacon and good sharp cheddar cheese. Put it back in the over until the cheese is melted. It makes a great lunch!

My mother in law makes corn chowder every Christmas and she adds mustard powder. I think it is a pretty good addition.
