Mataha - East African Soup

So tonight I made Mataha, which is an East African dish. It's a dumpling in the bottom of the bowl with a vegetable soup on top. It's from this vegetarian bean cookbook I have, Bean Banquets. gawd this is right up my alley, it looks wonderful (bookmarked)

what is hominy? is it needed to keep the dumplings together?

Hominy is a large white corn that has been cured in lye. You coudl either leave it out (which would be ok, but they add this toothsome texture which is kind of like meat) You might be able to use regular corn instead.

Is there anything one can replace hominy with? I don't think I can buy it in Denmark:(

Hominy is a corn product, so you could probably used canned corn and it would be ok. It might make the dish sweet though. Hominy isn't sweet.

You might be fine without it, but it adds sort of a texture of chewy bits. I liked it.

I made this last night, substituting a few of the ingredients, because of availability and dietary requirements.

And it was amazingly delicious :D
