Cake Pans, Wrap, and Freezing Cake and Frostings

Where do you usually buy your cake pans? I used to buy them at Wal-Mart but I have more options now. I don't want to spend a ton of money at Williams-Sonoma, but I want more selection and higher quality. I'm particularly looking for a 14-cup Bundt or Angel Food cake pan. I currently have Wilton 9-inch layer pans and may but more, but I'm ( Read more... )

Would bakery boxes work for the cakes? They come in various sizes - you could put cakes on rounds, then into the box. they also make much smaller bakery boxes that you could use for single slices.

Yeah bakery boxes would work great, but I'm gonna need a lot of them and IDK where to find them cheaply!

Freeze the cakes then wrap them in double plastic wrap. This is the way we did it when I worked at a restaurant. Unwrap before thawing and the frosting will stay nice.

I have a friend who is a pro and she routinely freezes frosted cakes- though she does what she calls the "crumb coat" a coat of frosting over the whole cake, and then adds the fancier decorations after pulling them out of the freezer.
I think she uses buttercream or italian buttercream.

I don't know where you are, but here in the Seattle area, we have a store somewhat like the WalMart style, called Fred Meyers. I bought the 12 muffin bundt pan like this, for $12 dollars.

For a Bundt pan, I would consider Nordic Ware. They are heavy and pricey, but I've had amazing luck with them really releasing cakes, which can be a challenge with bundts.

I have a springform pan with a bundt cake inset that I got on discount at the grocery store years ago, and it is great.
