Oh my goodness these sound so yummy! I am loving reading your entries about Ukrainian food, and am looking forward to trying the recipes myself. I'm half Ukrainian, but haven't eaten much Ukrainian food other than perogies, cabbage rolls and borscht. :)
This is one of my favorite things. My mom makes them all the time for me out of left over mashed potatoes. Though she sautees the mushrooms first with garlic and herbs and then puts them through the food processor.
She also makes two think patties then puts the filling on one and covers it with the other.

When my mom boiled chicken for soup stock and then served the boiled meat, I didn't want to eat it because it was so pale and white, so she would shred it and add it to mashed potatoes and make these little croquettes/patties/zrazy for me, though hers were just simple round patties. :)
YAY! My Jewish grandparents came from a small village on the Ukrainian-Polish border, so I remember Grandma Sarah (icon) making these -- but of course with the mushroom rather than the meat.
Actually, most of my memories of her involved either food (I was not raised Jewish, so "different" food suddenly appeared when she and Grandpa Moishe came to visit) or her lighting and blessing the Sabbath candles. I got recruited as the sous-chef when she cooked.
