That looks amazing.

If I can't get strawberry extract, do you think a syrup made from the fresh berries would add enough flavor? What else would be a good sub?

If you can't get strawberry extract, I would increase the pureed strawberries from 1 cup to 1 1/2 cups and reduce it to the called for 2/3rds of a cup. So that way you get a more concentrated strawberry puree.
