Glut of bananas, kiwi fruit and apples

The latest organic fruit&veg box has arrived before we managed to use up the last one, and has much the same fruit contents. I need ideas on how to use up bananas, kiwi fruit, and dessert apples, in varying stages of ripeness, given that I'm not too keen on sweet things anyway and my husband is already overprovided with such, Christmas being what ( Read more... )

If you don't come up with any recipes they should all freeze well. Did you know that if you puree frozen banana with a tiny bit of water it becomes fake ice cream? It's a neat trick and very yummy.

Bananas freeze beautifully, and with a little love and a blender make a great base for smoothies. I've heard that frozen banana blended with just peanut butter has the consistency of ice cream (though some say to thin it out with the milk of your choosing because it's too thick).

Have you been invited to any New Years gatherings? A light and fruity trifle might be what the doctor ordered. Kiwi looks beautiful when lining a trifle bowl.

Frozen banana, honey, cacao powder & walnuts (or pecans if you're flush) is my recipe. Whizz it up and eat it as quick as you can before it gets watery!

How about a banana curry? Spiciness can be moderated to your taste.

For the apples, you can always make applesauce. Personally, I hate the stuff, but I sometimes cook with it when I'm trying new things, or controlling fat in my diet. You can't really taste it in some recipes, so its a great alternative. You can can or freeze applesauce. You can also do apple butter if either of you like toast with jam in the morning. All apple butter is is applesauce that's been cooked longer, with some spices thrown in.

Can't help you with the kiwi's, since I love the things and would just eat them for breakfast. Bananas freeze fairly well (out of the peel). You can also sub bananas in baked goods recipes fairly successfully if you are looking for lower fat alternatives.

Only other thing I can think of is to cut them thinly and dry them in the oven.

Because I'm kind of a heathen, I never tend to pay too much attention to whether things like apples/pears are dessert or for eating. So maybe use the apples in a savoury dish like pork with apples? (Google will have some suggestions) You can also use them in salads. Theres also a Jamie Oliver recipe (I think) for red cabbage with apple and bacon which is quite good.
