Recently a friend of mine gave me twelve Thai red chilies but I have no idea what to do with them. I've never cooked with these before so I have no idea what to make with them. Any suggestions?
Put them in a stiry fry (cook them in a little oil with garlic for a minute or so, then throw in meat, veggies and whatever sauce you like - I usually use soy, chillibean paste in soy bean oil, some brown sugar and lime juice, then lots of thai basil at the end). Add them to green or red curry, mix them with some fish sauce, sweet chilli, lime juice and corriander for dipping sauce or soy, brown sugar and sesame oil for Asian salad dressing, mix them with mango, corriander and lime juice to make salsa... Can you tell I eat a lot of Thai and Vietnamese?
The smaller they are the hotter they are. I'd say start with a little bit and add to taste if you don't use them often!
id wrap them loosely in tinfoil (like a little boat) with a some olive oil & salt & roast them @ 350 for maybe about 20 min. keep an eye on them & take them out when theyre starting to get nice & soft & a few charred areas on them. you can put some garlic cloves &/or peppercorns in the foil too if you want. 6 chilies should add a great flavor to a pretty big bottle of olive oil. :)
