Freezer friendly baked goods

Probably as a result of some sort of hormonal thing, I'm feeling the urge to do some baking in my last month of pregnancy. I figure this is a good opportunity to make some stuff and freeze it, to be eaten after the baby comes. I'm already planning some zucchini bread and possibly some other quickbreads. Corn bread or cornmeal muffins ... great with soup or chili for fast meals.

Banana bread is always a good choice. I like the muffins cause I can thaw just a couple of different kinds depending on what I'm in the mood for. Other fruits (apple, peach, blueberries/raspberries) are good in the muffins as well. Use buttermilk or a yogurt/milk combination in the recipe if possible for some extra flavour and calcium.

Yeah, banana bread is on my list, and corn bread is a great idea since I already plan to freeze some chili.

Muffins! I've never made a muffin that didn't freeze nicely (although there probably are some out there)
I tend to stay away from the ones with a crumble on the top

Pies actually freeze pretty well, baked or unbaked, and this is a good time to pick up fresh fruit at farmers markets.
And of course, every freezer needs lots of balls of cookie dough in tupperware;)

Are you looking for savoury pies/patties/pasties as well? I make a wonderful Jamaican beef patties that I bake and freeze. They thaw wonderfully well in the microwave and with soup, mashed potatoes and salad make for a filling supper.

I can share the recipe if you want it. It can be made as mild or spicy as desired and the filling is very adaptable to whatever you have on hand.

Variations: Shredded chicken or chopped turkey, jerk chicken, mushroom chicken, curry chicken, spinach and cod, potato and kale (veg), turkey pot pie
