The black beans and rice I made were so legit

Yesterday I posted saying I was broke, as was my refrigerator and also my brain.  I ended up making black beans and rice with andouille sausage and it was so dang good I came back to share.  I do not have a picture, although I doubt a picture of that with my phone would have been very appetizing.  Black beans do love to color anything they are ( Read more... )

I have to admit that I buy Zatarain's jambalaya and gumbo boxed mixes, and occasionally their dirty rice. I usually throw another cup of uncooked rice and more liquid in the first two. Sausage and duck meat are my favourite proteins when possible. I've used rabbit when my parents still raised them.

The dirty rice I bulk up with a couple of cups of dried bread and other stuffing ingredients, including turkey giblets for the BEST giblet stuffing ever. :) Cause you're right, there is way too much salt for a normal human being in these things.

I found the black beans and rice one in our cupboard one day when we were wanting to eat a snack and also not wanting to leave our house. My mom had given it to me in a load of food. The flavors are pretty good and that is why I tried to recreate that part of it. But seriously, that sodium kicked our asses and we were up all night with wicked indigestion. That giblet stuffing sounds wonderful!

Using things in your pantry when you're short of cash makes a lot of sense but I think you did a great job of doing it at home. What do you think your dish was missing tastewise?

By the way, I don't use the Zatarain more than once in 3-6 mos when I get a craving for cajun food. I know I should make my own roux with oil and flour etc but, it's more for convenience and time than getting a healthy meal on the table sometimes. :) Chicken livers and mashed potatoes tomorrow.

Well, I was going to add a splash of red wine vinegar to the beans and I think that would have been quite tasty but I forgot to do it.

Onion, Black Pepper, Celery Seed, Cayenne Pepper, Parsley, Basil, Marjoram, Bay Leaf, Oregano, Thyme, Savory, Rosemary, Cumin, Mustard, Coriander, Garlic, Carrot, Orange Peel, Tomato Granules, Lemon Juice Powder, Oil of Lemon, and Citric Acid
