Do you like paneer? There's a pretty tasty spinach and paneer dish called Palak Paneer. I haven't made it myself, but this recipe looks pretty good.

Purple and white cauliflower would work for color. And brocoflower (it is a broccoli/cauliflower hybrid.)I would add carrots and celery to my roasted veg though.

Dice up all sorts of veggies, including potatoes, toss them in oil, salt, sugar, a spot of cumin powder and paprika and crushed black pepper and grill till done. Garnish with some cream or butter.

I made a tasty cabbage curry this week. Heat oil in a pan & add onions, ginger, and garlic. Cook just a bit, then add cumin & mustard seeds (about a teaspoon of each). Let that go about a minute, and add a couple of tablespoons of tomato paste, 1/2 tsp ground cumin, 1/2 tsp coriander, 1/4 tsp cayenne, 1/2 tsp turmeric (these are all approximate, so adjust as needed). Oh, and salt! Stir for 30 seconds and add a chopped head of green cabbage. Cook until the cabbage is tender, adding water if it gets dry.

We had this alongside coconut dal. I'm sure it would be good with your pot pie!

I had this raita once that had big chunks of cucumbers and tomatoes in it. It was almost like salad. That might be a good side :)
