When I do this, I add some bacon grease to the olive oil, and use carrots, celery, potatoes, yellow onions, and green peppers.

You inspired me! I've done this before, but had honestly forgotten about the method. (Steaming is my go-to for veggies, although it does get a little boring)
I used taters, red bell peppers, and some fennel, with herbes de Provence. Very yummy.

Nice! I guess it gets very fragrant with fennel and herbs de Provence. We used to bake chicken with fennel, potatoes and moroccan spices the similar way. The aroma got just amazing.

True, steaming is very good and it's healthier than baking. Thank so much for sharing!

You're right about the best way to cook veg- and I've found if you stir-fry them quickly before baking, you can use a lot less oil to get the right texture.(this works especially well for root vegetables)
