these look awesome! Will try this this weekend after my hubby doesn't eat all the bananas I got him ;)

wonder how these would work with almond meal or coconut flour

I foresee experimentation!

I don't know how they would work with almond flour or coconut flour, but those are things I keep around, because I do use them, so if you try it with one of those, I would love to know the outcome.

They sound amazing - do you have any ideas what could be used in place of bananas? My bf is allergic & I've been having the hardest time finding suitable replacements in recipes D:

I've never used anything else. I maybe would say applesauce, but I think you're going to need to up the oats, since applesauce has more water content than bananas. The thing is bananas have this creaminess to them that makes these cookies moist without being sort of rubbery like some cookies with no oil or butter may have.

So since you of course can't use bananas, I'd use applesauce and hope it turns into something yummy.

*grins* oh I know, I'm lamenting the loss of bananas in cooking - I've been on a big smoothie kick, & it seems like every smoothie uses at least one banana in it :P

Applesauce & extra oats would probably work well... maybe pumpkin (I made a pumpkin chocolate chip cookie a while ago & it was the best soft chocolate chip cookie I had ever eaten :D)
