I say go for it! The first step is easy. You will know when it turns into the caramel color because first the color is very clear. If you use a pot that is stainless, or I use an off white Le Cruset pot, makes it easier because you can see the color change clearly.
Then in the 2nd step when you are just waiting for it to come to the correct temperature you just stand there and keep checking the temperature. Then when it reaches 246 you're done!
One thing that is important., In the first steps, don't stir. Then in the 2nd steps after you've added the cream mixture, you do stir it frequently.
If you are careful and really have patience and stand there to first pay attention to the temperature, and then keep checking the temperature, you will be fine, and I know you can do it.
It doesn't even take that long, you will be standing at the stove, but in total it's only for less than a half an hour. And the results are so great! It's worth it.
your welcome. The crystals would form in the first step, that's why no stirring there, but after adding all of that fat, the crystals have the fat to cling to. So that's why you can stir then.

How easy would it be for a first timer?
