Money is a little tight. I'm in the mood for tons of roast veggies that get made whenever I roast a large piece of meat. The price of beef is insane at the moment, but I still want the taste of the juices for the veggies. Any alternatives to a good piece of meat? I'm fairly certain my grocery stores don't sell chicken fat.

I'd say beef/chicken bouillon or stock.

I was going to suggest the bouillon cubes, but I see that has been suggested. A friend of mine even flavors her green beans with them. If you like onions and mushrooms then buy a little piece of salt pork. Put the salt Pork in the bottom of a large frying pan, cut up several large onions, drain a few cans of mushrooms. You can use the fresh mushrooms. Put about two or three tablespoons of butter on top. Cover with a lid and let the onions simmer down. I like mine really browned, but you can cook them as done as you like. Many Grocery stores sell the end pieces of bacon that is not as expensive as bacon, these are used to season foods with.I. was trying to think of some inexpensive cuts of beef

either:

1) Onions, Mushrooms, and some good bacon
2) a packet of Lipton Onion Soup thrown in while your vegetables are steaming
3) for some reason, cabbage, onions, and kielbasa goes a hella long way seasoning vegetables, even the cheap kielbasa.
