My favorite way to make those is I make them according to the package, but add a little more cumin and some sricha. Then, I form them into smaller patties and toss them in a salad with spinach, tomato, cucumber and a yogurt dressing. My niece likes this too, but she prefers it with ranch - that's the only way she will eat salad

I used to be vegan for 3 years, and I got tired of tofu after about 6 months. Falafel's were one thing I liked consistently, so I ate a ton of them. Since I started eating chicken again, I sort of miss the taste.
My favorite way to eat falafel is in a pita (I like whole wheat) with tomato, spinach or lettuce, and red onion. And tahini sauce. That is why I responded because I had to tell you to try them with it. It is so good. It is so good that I like other things with it like veggies and homemade pita chips.
Super Delicious Tahini Sauce
1/2 cup tahini (sesame seed paste) 3 gloves garlic, crushed 1/2 teaspoon kosher salt 2 tablespoons olive oil 1/4 cup lemon juice
Mix all together in the food processor and add water until you reach the desired consistency. Let sit for at least 30 minutes in the fridge. Apply liberally.
I made falafel tacos a while back, and they were delicious. I made the falafel patties as per the instructions on the package, then put them in a corn tortilla with tomato, guacamole, and sour cream. I did it mostly because it was all stuff I had on hand (rather than pita and yogurt to make tzatziki sauce and all that) but it ended up being REALLY good together.
I was really broke when I moved out of my parents' house, up until recently when I figured out how to budget myself. As such, I got REALLY good as making tasty food using only what I had on hand, because I often didn't have money to go buy what I "needed". It was kind of a good thing, because it gave me a lot of experience and courage to experiment :)
i LOVE it in a pita. Feta cheese, tomatoes, taziki sauce (made with greek yogurt!) cucumbers, lettuce, and sometimes black olives. and sometimes i put french fries in there...mmmmmm..
We also made Falafel tacos sometimes the same way the commenter above me did. Besides i put pico de gallo on them also
