Pasta is the first thing that popped into my head. Something like spaghetti or lasagna is simple/quick to make and we always have leftovers.

I think beans would be another good choice. White beans with rice, or red beans and sausage. Either one could be made on the stove top or in the crock and you could make enough for leftovers.

I have honestly left my kitchen unpacked so far so i could move that last and be able to eat and get to the things that we might need. Luckily the new place is less than 5 miles away. I should have added that. Sorry :)

keep all the fixings separate and you can use them for salad toppings the next day for taco salads.

I don't eat much soy so I don't use tofu most of the time when I make it. I like to mix up the vegetables - broccoli, asparagus, bell pepper, mushrooms, etc.
