Whenever my mother cooks beans in her crockpot, she uses smoked meat (neck bones or turkey wings) for seasoning. What do you do when you're vegetarian and don't want to use meat for seasoning?
Edit: thank you everyone. These all sound like really great suggestions. I'll have to try them when I get the chance.

Also a dash of vegetarian Worchester sauce, made by World Harbors. Great stuff and no nasty little fishies!
