Chicken, leek and wiltshire ham pie.

Hello cookingI'm a uni student living in England, and I frequent a pub called Wetherspoons - mainly because it's the nearest one to me. The one item I ordered the majority of my time was a wonderful chicken, leek and wiltshire ham pie that seems to have disappeared off the menu in my local Wetherspoons ( Read more... )

Foolproof pastry? To be honest, buy a packet of Jus-Rol from the supermarket, makes life a lot easier and is very tasty, Sainsburys own brand shortcrust is good also, a bit shorter.

And if you're wanting puff pastry for the top of the pie, yeah even chefs go for ready made puff xD

The stuff I buy is in the frozen desert section. Just ask a clerk where the frozen shortcrust pastry is if you can't find it. :)

I have been making a shed load of pastry lately, practicing for when my English In-laws come over here for Christmas. Mince Pies, Sausage Rolls, etc..

I have found that the Be-Ro recipes work well and I have had success with this one http://www.cooksrecipes.com/pie/short-crust-pastry-recipe.html

But the thing that makes it all come out perfect is the food processor. Pulse everything cept the water until it is crumbly then slowly drizzle in water until most of the dough is in a ball.

Other important thing is no matter how you make it, wrap it in some cling film and let it rest in the fridge for half an hour.

I hope someone has a recipe for the pie..it sounds yummy, leeks and all *laff*

Secondly, I might have to try that recipe if I can borrow a food processor off someone since mine's broken.
