I was craving Watermelon Gazpacho a while back, and
deemystified was kind enough to give me the perfect recipe. I served it with grilled shrimp and a coconut lime and honey basmati rice. I made the gazpacho the day before and let it sit over night so that the flavors could marry. And oh boy did they!

Just wanted to briefly comment that frozen citrus fruit rinds zest really nicely, so if you've ever got extra rinds after juicing, throw them in the freezer. It'll make your life easier the next time you need to zest.
